By definition, Aburi style sushi refers to nigiri sushi where the fish is partially grilled (topside) and partially raw. However, due to the intricate process and precision in which each piece is torched, Aburi sushi is not as common to find among Japanese restaurants in Manila as let’s say, California Maki.

Mecha Uma – BGC

With Sensei Sushi and Ooma in his tail of culinary achievements, one thing is certain: Chef Bruce Ricketts knows his sushi. Mecha Uma, meaning ‘absurdly delicious’, offers a more fine dining and out-of-the-box experience with it’s 10-course omakase where Chef Bruce personally prepares and serves the dishes. An a la carte menu is also available. Try the Salmon Aburi with Truffle and Seared Scallops.

Senju – EDSA Shangrila

Senju, meaning “‘feast of a thousand pleasures”, is one of the in-house restaurants of EDSA Shangri-la Hotel that offers authentic and classic Japanese cuisine prepared by world-class chefs. It offers a whole lot of quality dishes but their by-the-pair aburi sushi is one of their customer’s favorites, order their Salmon and Hamachi aburi rolls.

Genki Sushi– various branches

Genki Sushi from Japan is the pioneer of Kaiten Sushi, or sushi served on a revolving conveyor belt or speed trains, in this case. Menu includes a variety of fresh and quality sushi, maki, ramen, tempura and more. Guests can enjoy ordering from a tablet. Recommended dishes include the seared salmon with black pepper dish. P.S. There’s unlimited house tea from the tap. Watch out for their 2nd branch opening at UP Town Center.
