Bone marrow has gotten a bad rep over the years. Along with sisig, aligue, and crispy pata, it’s one of the foods we associate with “putok batok.” Because it’s so luscious and melt-in-your-mouth, we tend to assume that because it’s so good, it must be bad for you, right? Wrong!

In fact, bone marrow plays a very special role in immune health, thanks to its rich concentration of alkylglycerols which are known to boost production of immune cells, red blood cells, and platelets. And that’s not all – it is also a rich source of fat-soluble nutrients (including vitamins A, E, K and D) that fuel the heart, protect cells and boost the immune system.

Roasted Bone Marrow – Fukujin Izakaya

Roasted Bone Marrow – Gourmet Gypsy

Owned by Chef Waya Araos-Wijangco, Gourmet Gypsy Art Cafe serves food from around the world. Their Roasted Bone Marrow is garnished with preserved lemon and parsley gremolata, served with warm ciabatta and roasted garlic. The chef suggests replacing the ciabatta with coconut pita or an almond bagel to make it low-carb. 

Fun fact: Before becoming a cafe, the cafe served as a vocational school (Open Hand School for Applied Arts) that prepares young adults with special needs for employment and entrepreneurship.  To this day, the restaurant serves as a transitional place for new graduates.

Bone Marrow Steak Pie – Mudpie Heaven

Mudpie Heaven is one of the newest restaurants to open at Circuit Makati and could be the quickest thumbs up you’ll ever give. It specializes in Filipino-American comfort food and of course, mudpies. Don’t miss their hearty, Bone Marrow Steak Pie – beautiful beef strips and lots of cheese baked into a pie, served with silky mashed potatoes and salad. Named after the mother of the Sanvictores family, Lola Victoria, this post-WWII era home is one of Quezon City’s most well kept secret restaurants.
