Located in Poblacion, Holy Smokes is a Texas-style barbeque joint that serves everything from smoked brisket to ribs to sausages and pulled pork. Inspired by Franklin Barbeque in the States, their no frills casual service of lining up to choose your meats and sides is where the fun begins.

The simple interiors are chock-full of wooden accents that are appropriately reminiscent of a barn restaurant. You’d appreciate the mix and match seating styles because that’s exactly how the eating goes: mixing and matching your meats to your sides.

Big flavors in simple packages—no frills barbeque is what you’ll find at Holy Smokes. Pitmaster Juano Gutierrez handles the meat while chef Red Espiritu makes the in-house BBQ sauces, chili, bar chow, and sides. He’s also one of the minds behind Holy Smokes’ chicken recipe which is out of this world.

To get their signature taste, the meats at Holy Smokes are smoked for 12-16 hours using local fruit woods. That’s a lot of loving for a long time.

As far as combining your meats to the sides, the owners recommend pairing the chicken with Cajun rice and creamed corn; beef ribs with brioche, pickles, and onion. It’s also worth trying the meats first without the BBQ sauces, then adding more little by little.

After you’ve licked your fingers and trays clean, wash things down with turtle, apple, or pecan pie ala mode. You won’t regret it. If you drop by Holy Smokes for dinner on Tuesday to Saturday, it’s worth staying for happy hour at 9-11pm. Beers go for P50 each and select bar chow at 20% off.
