An all-new Filipino eatery is Chef Jordy Navarra’s surprise comeback.

Filipino cuisine was named as the ‘second best in the world’ by CNN in 2015–beating Italy and Japan by almost double the votes! No wonder so many Filipino restaurants are popping up in Metro Manila, our native plates are hard to resist.

Booky’s radar has detected little whispers of Chef Jordy Navarra’s comeback news and we just couldn’t contain our excitement. In case you didn’t know, Jordy Navarra is the genius behind the famous fusion restaurant, Black Sheep BGC. He’s worked at The Fat Duck, a 3-Michelin star restaurant in Britain by Chef Heston Blumenthal, and at Bo Innovation, a modern and creatively bold restaurant in Hong Kong by Demon Chef Alvin Leung. If you’re the kind of chef who has worked and trained at TWO of the best restaurants in the world, then we most definitely have all eyes on you.

Toyo Eatery – Makati

Amidst the bustling streets of Chino Roces in Makati is where Toyo Eatery is set to officially open its doors soon. Now, this is the kind of news that we live for!

Here’s a run down of what we know about Chef Jordy Navarra’s new Filipino restaurant so far and why it’s named after your typical Pinoy condiment.

Why the ubiquitous name? Chef Jordy explains that:

TOYO, because broken down it's a simple name, easy to remember and repeat...As a name and even as an ingredient (soy sauce), it's very plain and unassuming but is complex and takes time and knowledge to make.

Of course, as locals we all know that toyo can also mean crazy, and Chef Jordy agrees with this because according to him, “that’s how we feel on most days.”

Toyo Eatery aims to be your regular go-to place for people who want to experience the essence of Philippine flavors, traditions, and cooking techniques. No snooty dress codes here as Chef Jordy wants to keep the focus on the food and the famous warm hospitality of Filipinos.

According to Chef Jordy, his vision for Toyo’s menu is to pay homage to the “culture of eateries” here in Manila and serve food based on the day’s fresh ingredients. Diners can expect an interesting degustation experience and a variety of dishes each day. Toyo also serves a regular ala carte menu as well.

Of course, you can also order Chef Jordy’s famous Bahay Kubo Salad, which is made out of all 18 veggies mentioned in the ‘Bahay Kubo’ Filipino folk song! This is one of the freshest and most popular dish at Black Sheep BGC.
