Since the late 2000’s, Korean-American chefs David Chang (of the Momofuku Group of Restaurants), Edward Lee (of 610 Magnolia, Milkwood, and Succotash), and Roy Choi (of Chego, Sunny Spot, A-Frame, and Kogi BBQ) have been changing the game by challenging “authenticity” as the highest standard of cuisine.

It’s thanks to them that “sincerity” is gradually replacing “authenticity.” All three chefs pay homage to their heritage not by cooking Korean food; rather, simply by cooking good food. 

Did you know? The movie, Chef, directed by Jon Favreau, was influenced by (and loosely based on) Roy Choi who is widely considered to be the pioneer of food trucks in Los Angeles.

Kogi BBQ is Choi’s most popular concept. Not only is Kogi recognized as the “OG Korean taco truck,” it is also said to be responsible for sparking the Korean-Mexican food craze that swept L.A. and took the world by storm. In fact, it was a visit to the City of Angels that inspired the owners of KoCos to open a similar concept in the Philippines.

Amid the hustle and bustle of Quezon City, KoCos is a casual, chilled-out place to be. Brick walls and warm lighting make the space homey and inviting but the menu will definitely transport you far from home. From the name itself, you can expect to find yourself someplace that’s a cross between Korea and Mexico.

While it’s certainly not original (there are already a handful of its kind in the country) KoCos gets its edge from the same value that shot Chang, Lee, and Choi to fame: sincerity. The owners are not exactly experienced restaurateurs, they’re just your typical food-loving family who saw an opportunity to do something unique and ran with it.
