This one’s for the hopeless ramen-tics!
Here at Booky, we absolutely love ramen. It should come as no surprise that we like to keep our eyes and ears open for any new spots serving soups that we can slurp up. We heard some exciting news and we just couldn’t keep it a secret: Tongara Ramen is opening a branch in Manila!

Tongara Ramen was first established by Makoto Okazaki in Shinjuku, Tokyo. The chef spent over a decade perfecting the art of ramen until he developed a one-of-a-kind broth that was truly his. To describe this broth, Mister Okazaki coined the term “tongara” – a combination of Tonkotsu (pork bone broth) and Torigara (chicken bone broth).
John and Aubrey Borja visited the ramen shop in 2015 and fell in love with the rich flavor that was unlike anything they’d had before. As fate would have it, the Cebuanos, in partnership with Okazaki, brought Tongara Ramen to the Queen City.
Fun Fact: People from far and wide have tried Tongara and loved it - in 2016, Mr. Okazaki opened a branch in Tel-Aviv, Israel!
Next month, the franchise will open their second branch in the Philippines on April 7 – this time, right here in Metro Manila! The ramen master, Okazaki, himself is confirmed to be making an appearance at their grand opening in Lamp Quarters Marikina.
Here’s a first peek of the place and what’s in store!
Tongara Ramen

Tongara Pako Ramen
Signature tongara broth with pako (breaded pork cutlet), tamago (egg), menma (bamboo shoots) and greens.
Tongara Tantanmen
Signature tongara broth with chili paste, sesame oil, minced pork, tamago (egg), menma (bamboo shoots) and greens.
