With international franchises and foreign cuisine concept opening left and right, it’s always refreshing to see a new Filipino restaurant in the mix. What more when we get a closer look into a provincial culture in our food scene, something other than a traditional Tagalog concept?

Ilocano food has always been on the experimental side of our palate’s spectrum – packed with different flavors, recipes handed down for generations, using meat Manila could never. Makati‘s changing the scene with this cozy restaurant.

Kambingan ni Apong

Kambingan ni Apong is a cozy restaurant in the heart of Makati that brings Ilocano dishes, particularly the kambing or goat variety, into the spotlight. But don’t let that scare you—they have food for just about everyone! Kambingan ni Apong also serves traditional Filipino home-cooked food that’ll make you feel like you’re visiting your relatives in the province (Ilocano or not).

It’s the lack of goat specials in Metro Manila that gave the owners the idea of opening an Ilocano restaurant in one of the most popular area in the city. Thankfully, they also have a good backstory that explains their lovely authentic Ilocano offerings.

Apong is a real person who developed a penchant for Ilocano goat recipes as he was courting his wife, who hails from La Union. He is proof that kambing brings people together and wins hearts.

Fun Fact: Apong is the owner's grandfather, and the face on their logo. "Apong" is an Ilocano term that means "grandpa."

The interiors are what differentiates them from the other kambingans. Most establishments like that are presented turo-turo style, but the owners decided to have a sit-down restaurant so customers could relax and really savor the food. It’s designed with a rustic chic aesthetic that’s both inviting and functional.

One is guaranteed to enjoy their experience at Kambingan ni Apo. Their motto is if the dish is just “puwede na,” it shouldn’t be offered to their customers. They made classic Filipino dishes their own by using goat meat and adding spice to it.
