      Is a traditional Negrense and Ilonggo comfort food. It's our version of bulalo or boiled bone-in beef shank which come with the customary cardiac delight bone marrow or utok in Hiligaynon (utak in Tagalog). Taste to believe, our Cansi is salt-free.

    • La Paz Batchoy

      Is a soup dish composed of sliced pork, pig's innards, and noodles. This dish originated from the district of La Paz in Iloilo City . Throughout the years, batchoy gained popularity and has been a favorite soup dish of the Ilonggos and Negrenses.

      Is the ultimate favorite dish of most Negrenses and Ilonggos. It is also one of the most missed native dishes as kadyosand the souring ingredient, batwan (batuan), are hard to find when outside of the Ilonggo region.

    • Pancit Molo

      Is one of the most identifiable pancit dishes in the country. This dish originated from the district of Molo in Iloilo City. It stands out uniquely among the noodle dishes mainly because of its non-traditional pancit look. It is a derivative of the Chinese wonton (filled dumplings) made into a soup.

    • Adobo de Silay

      Is one of the Negrense or Ilonggo versionsof the famous Philippine flagship dish - Adobo. Our family's version does away with the use of soy sauce (or patis in the Ilonggo region). It's cooked purely in vinegar, water, salt, pepper, laurel leaves, atsuete and garlic.

      Is our version of the Filipino-Spanish dish, also called ox tripe stew. It is made from ox tripe and veal shanks (ox feet); boiled and simmered until extra tender; carrots, chick peas (garbanzos), and bell pepper are also added in.
