A culinary twist on the Filipino sampaloc (tamarind) stew having cooked chunks of corned beef rather than the usual meat. Together with short ribs and vegetables, it is served in a palayok (clay pot) with a candle underneath to maintain its’ warmth, with the sourness of the soup adjusted to one’s liking by offering a taste test after placing an order.
